(A note for our Jewish customers: our beef is not kosher. Martha is trained as a shochet only for poultry, not mammals.)

We raise beef cattle because regenerative grazing is the best way we can care for our land. Our farm has a history of soil erosion, and much of it is too steep to plant crops; by keeping it under a living blanket of permanent perennial pastures, we protect the soil. By rotationally grazing cattle on those pastures, we not only hold the existing soil in place, we enrich it and build more topsoil, sequestering carbon from the atmosphere in the process. And as an added bonus, we get premium beef with great texture and amazing flavor!

During the growing season, we move our herd to fresh pasture every 1–3 days; in the winter they eat hay produced here on the farm. They always have access to clean water and a salt/mineral supplement. We don't use antibiotics as a feed additive but do treat with antibiotics in the rare case an animal is sick enough to need it. We will always tell you if the particular animal you're buying was treated with antibiotics at any point in its life.

Our herd includes various crosses of Angus, Hereford, British White, and Galloway genetics. We keep all ages together in one herd from birth to harvest, so our steers never experience the stress of being shipped away from their mothers to an overcrowded, unfamiliar feedlot. Our cattle grow slower than the industry standard, developing richer flavor and reaching slaughter weight around 24–30 months of age.
